Astaxanthin

Astaxanthin is a red carotenoid pigment produced by the microalga Haematococcus pluvialis. It reaches crustaceans and salmon through their food and colors them red.

Also listed as Cardax

Where does it occur in food?

Fish and crustaceans contribute astaxanthin to the diet; EFSA included these foods when assessing total exposure. Its acceptable daily intake is a safety benchmark, not a nutritional requirement or a target for meals. 1
