Bone Broth Protein
Bone broth protein is a powder made from broth of simmered animal bones. It contains amino acids also found in collagen, such as glycine and proline.
How much collagen does a bowl contain?
A laboratory analysis found wide differences between broth recipes. Standardized broths supplied less of the measured amino acids than a 20 g reference collagen supplement; some café preparations contained much more than other broths. There is no single composition value that represents every bowl. 1
Is it a useful calcium source?
A separate analysis of homemade and commercial broths found calcium and magnesium below 5% of the daily recommended amounts per serving. Longer cooking and greater acidity increased extraction from bones, but the finished broth still provided little of these minerals in the samples tested. 2
