Glutamic Acid

Glutamic acid is an amino acid found in the body and in food proteins. Monosodium glutamate, or MSG, is its sodium salt.

Where is it found in food?

Tomatoes and cheese contain free glutamate; food proteins also supply it. These are ordinary dietary sources, distinct from studying a concentrated supplement for a specific health outcome. 1

Why does it taste savory?

Glutamic acid and its salts contribute a savory taste. BfR notes that glutamic acid occurs both freely and within proteins, with comparatively high amounts in some cheeses. 2
