Amino acid
Glutamic Acid
Glutamic acid is an amino acid found in the body and in food proteins. Monosodium glutamate, or MSG, is its sodium salt.
What do the names on a label mean?
In the EU, E 620 identifies glutamic acid and E 621 through E 625 identify different glutamate salts. BfR advises against using glutamate as a replacement for table salt. These food-additive uses do not establish a dose for treating brain fog. 1
