Carotenoids
Carotenoids are yellow, orange and red plant pigments such as beta-carotene, lutein and lycopene. Some of them can be converted into vitamin A.
Colorful food is the starting point
Carrots, sweet potatoes, pumpkin, spinach and kale supply beta-carotene. The German Nutrition Society lists 150 g cooked sweet potato as providing 935 micrograms of vitamin A activity, expressed as retinol activity equivalents. That number describes vitamin A activity, not the weight of all carotenoids in the serving. 1
